Muddle the pineapple pieces with the freshly squeezed lime juice, elderflower syrup, and vodka in a mixing glass.

Add ice and shake vigorously to chill the mixture.

Strain the mixture into an Old Fashioned glass filled with fresh ice.

Top up with bitter lemon and gently stir to combine.
