Use rich Demerara syrup and add all the ingredients, including the mint leaves, to a julep cup.

Gently muddle the mint with a barspoon to release its essence.

Add a couple of cubes of cracked ice and stir to chill the mixture.

Fill the cup halfway with crushed ice and let it chill further.

Top off with more crushed ice to completely fill the cup.

Garnish with a fresh bouquet of mint.
