Bow Street Banana

Slice a banana and generously sprinkle with cinnamon sugar. Use a culinary torch to brûlée the sugar until it caramelizes.

Place a few cloves on a heat-resistant plate or surface. Mist the inside of your glass with Irish whiskey, then use a torch to ignite the cloves. Invert the glass over the smoking cloves to capture the aromatic smoke.

In a Yarai mixing glass without ice, stir together the bitters, sherry, and Bananas Jameson until well mixed.

Pour the stirred mixture into the clove-smoked glass. Garnish with the cinnamon-sugar brûléed banana slice and serve.
