Use 2:1 rich simple syrup for its listed portion.

Chill a cocktail coupe in advance to ensure it is ready for serving.

Prepare a lemon zest twist to use as a garnish later.

Combine the cognac, Bols Blue Curaçao, freshly squeezed lemon juice, sugar syrup, and your choice of egg white or its alternatives in a shaker with ice. Shake thoroughly.

Strain the mixture back into the shaker, discarding the ice.

Shake again without ice to create a rich, frothy texture.

Fine strain the cocktail into the pre-chilled coupe glass.
