Sour Strawberry Highball

Chill a highball glass before starting the preparation.

Add the tequila and strawberry shrub syrup to the glass.

Briefly stir to combine the ingredients, then fill the glass almost to the top with ice.

Carefully pour club soda down the neck of a barspoon to gently top the drink.

Garnish with a lime wedge.

For the strawberry shrub, wash and quarter 1 lb ripe strawberries, then toss with two cups granulated sugar and mash gently.

Cover for one hour at room temperature, then refrigerate for one to two days, occasionally shaking the container.

Add one and a half cups apple cider vinegar, strain while pressing the fruit, and bottle the syrup.
