Hibiscus Cherry Vodka Spritz

Muddle the cherries in a pot, add the separate listed 1 cup water and bring to a boil. Remove from heat, add the dried hibiscus, cover and steep for 10 minutes. Strain into a pitcher and press the fruit to extract the liquid. Add the listed honey, juice from the listed lemon, pineapple juice and vodka, then chill. Serve over ice and top with sparkling water.
