Don Jefe

Chill a martini glass by filling it with ice water and setting it aside.

Add the mezcal, Byrrh, and Amaro Meletti into a mixing glass filled with ice.

Stir the mixture until well-chilled and properly diluted.

Empty the martini glass of ice water and rinse it with orange bitters, discarding any excess.

Strain the chilled mixture into the prepared martini glass.
