Passion Fruit Collins

Select and pre-chill a highball glass.

Prepare a garnish by slicing a wheel of lemon.

Wash and cut a fresh passion fruit in half, then scoop the seeds and flesh from both halves into your shaker.

Add the gin, freshly squeezed lemon juice, and passion fruit syrup to the shaker. Shake vigorously with ice.

Fine strain the mixture into the pre-chilled highball glass filled with ice.

Top with soda water and give it a brief stir.

Garnish with the lemon slice wheel.
