Select and pre-chill a cocktail coupe.
Prepare a garnish of aromatic bitters.
Dry shake all ingredients, including the bittersweet orange-red aperitivo, pisco, freshly squeezed lemon and lime juices, rich sugar syrup, and either pasteurized egg white or Fee Brothers Fee Foam cocktail foamer, without ice to emulsify.
Shake again with ice until well-chilled.
Fine strain the mixture into the pre-chilled coupe glass.
Garnish with a line of aromatic bitters dashed across the surface.
