Zima Sour

Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill a cocktail coupe.

Prepare a garnish of smoldering star anise.

Shake the bison grass vodka, freshly squeezed lemon juice, Monin Passion Fruit Syrup, cloudy apple juice or cider, rich sugar syrup, and egg white or Fee Brothers Fee Foam, along with ice.

Strain the mixture back into the shaker.

Dry shake the contents without ice to emulsify the ingredients.

Fine strain the cocktail into the chilled coupe glass.
