For honey ginger syrup, combine 1/2 cup honey with 1/2 cup boiling water and stir to dissolve. Add about 1 oz freshly peeled ginger and leave to cool for a few hours. Shake the listed measured cocktail portions except the rum with ice, strain into a highball, add crushed ice and float the separately listed aged Jamaican rum splash on top.
