Beet It

Combine the mezcal, freshly juiced beet juice, lime juice, and agave syrup in a shaker.

Fill the shaker with ice, seal, and shake vigorously until well-chilled.

Double strain the mixture into a chilled cocktail coupe.

Finish by adding olive oil on top for garnish.

Note: For the best flavor, use freshly juiced beets. If a juicer isn't available, visit a local juice shop for a fresh batch. While natural grocery stores offer bottled beet juice, these often contain added acids. Adjust the lime juice accordingly to maintain balance.
