Velvet Seine

Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill a cocktail coupe.

Shake cognac, Bols black raspberry liqueur, freshly squeezed lemon juice, rich sugar syrup, and either egg white or Fee Brothers Fee Foam with ice.

Strain the mixture back into the shaker.

Dry shake the mixture without ice.

Fine strain into the pre-chilled coupe.

Garnish by placing two drops of Angostura bitters on the surface of the cocktail.
