Fizz á la Violette

Use 2:1 rich simple syrup for its listed portion.

Flash blend the gin, crème de violette, freshly squeezed lemon juice, rich sugar syrup, whipping cream, and egg white without ice to emulsify the mixture. Transfer the blend into a shaker, add ice, and shake vigorously. Strain the cocktail into a chilled highball glass, ensuring no ice is included. Top with soda from a siphon.

Alternatively, shake the gin, crème de violette, lemon juice, sugar syrup, whipping cream, and egg white with ice, then strain back into the shaker. Perform a dry shake without ice, and strain into a chilled highball glass. Finish by topping with soda water from the siphon.
