Shake the bitters, pineapple juice, lemon juice, cognac, grenadine, Averna, and baijiu with ice until well chilled.

Strain the mixture over a large ice cube into an Old Fashioned glass.

Garnish with a sprig of rosemary, gently spanked to release its aroma, and laid across the ice cube.
