Prepare the day before by freezing coconut water in a large ice cube mold.

When ready to craft the cocktail, combine the dark rum, scotch whiskey, Cointreau, Demerara syrup, and Mole bitters in a shaker with ice. Stir the mixture until thoroughly chilled.

Strain the cocktail into an Old Fashioned glass over the prepared frozen coconut water ice cube.
