Upside-Down Raspberry Cheesecake

   Use 2:1 rich simple syrup for its listed portion.

   Select and pre-chill a martini glass.

   Prepare a garnish of crumbled graham cracker or plain digestive biscuit.

   Muddle the raspberries in the base of a shaker.

   Add the black raspberry liqueur and shake with ice.

   Fine strain the mixture into the center of the pre-chilled martini glass to form the base layer.

   Clean the shaker or use a second one.

   Grate lemon zest into the shaker.

   Add the vanilla flavored vodka, Giffard Vanille de Madagascar, sugar syrup, mascarpone cheese, and whipping cream. Shake with ice.

    Strain the mixture into the glass over the back of a spoon to carefully layer it over the raspberry base.

    Finish by crumbling the graham cracker or plain digestive biscuit over the cocktail as a garnish.
