Westbourne Strength Sazerac

Chill a Goblet Glass by filling it with ice and setting it aside.

In a mixing glass, add the gin, simple syrup, and bitters.

Stir the mixture with ice until well-chilled and properly diluted.

Discard the ice from the Goblet Glass.

Rinse the chilled Goblet Glass with absinthe by swirling it around the inside of the glass, then discard any excess.

Strain the stirred gin mixture into the prepared Goblet Glass.

Gently float the Islay Scotch on top of the cocktail by pouring it over the back of a spoon.

Serve immediately, savoring the complex interplay of flavors.
