Grappa Sour

Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill an Old Fashioned Glass.

Prepare a garnish of lemon zest twist (discarded) and a lemon slice.

Shake the Grappa, freshly squeezed lemon juice, rich sugar syrup, and your choice of egg white or alternative with ice.

Strain the mixture back into the shaker.

Dry shake without ice to achieve a smooth texture.

Fine strain into the pre-chilled glass filled with fresh ice.
