Prepare the spiced apple-cider reduction by simmering cider over low heat with preferred mulling spices, such as cinnamon, allspice, cloves or cardamom, until reduced to one quarter of its starting volume. Use the listed 1 oz serving of this prepared reduction.

Shake the apple brandy, prepared spiced apple-cider reduction, fresh lemon juice, demerara syrup, bitters, and allspice dram with ice.

Strain the mixture into a chilled cocktail coupe.

Garnish with pomegranate seeds.
