Chill a cocktail coupe glass in advance.
Prepare the garnish by setting aside drops of aromatic bitters.
Muddle the raspberries at the base of a cocktail shaker.
Add the bourbon whiskey, Strucchi Bianco Vermouth, Strucchi Red Bitter, freshly squeezed lemon juice, rich sugar syrup, and your choice of egg white or alternative foamer.
Shake with ice, then strain the mixture back into the shaker.
Dry shake without ice to achieve a smooth emulsification.
Fine strain the cocktail into the pre-chilled coupe glass.
Finish by garnishing with drops of aromatic bitters on the foam head.
