Use honey syrup made with 3 parts honey to 1 part water by weight for its listed portion.

Shake the listed mint leaf, honey-and-mint gin, Amontillado sherry, honey syrup and cloudy unsweetened apple juice with ice. Fine strain into a chilled coupe and float one additional mint leaf on top.
