Mezcal Stone Sour

Select and pre-chill a toddy glass.

Rim the glass with Tajín seasoning by moistening the outside edge with lime or orange juice, then dipping it into the Tajín.

Prepare a garnish by twisting a coin-sized piece of orange zest.

Shake mezcal, freshly squeezed lemon juice, freshly squeezed orange juice, rich sugar syrup, egg white or its alternatives, orange bitters, and saline solution with ice. Strain the mixture back into the shaker.

Dry shake the ingredients without ice to emulsify.

Fine strain the cocktail into the pre-chilled, Tajín-rimmed glass.

Express the orange zest twist over the drink to release its oils and float it as a garnish.
