Select and pre-chill a cocktail coupe.
Prepare a garnish of lemon zest twist and a green apple wedge.
Stir the Lustau Jarana Fino Sherry, Strucchi Dry Vermouth, Calvados or apple brandy or straight applejack, Bénédictine D.O.M. liqueur, pear & cognac liqueur, and a dash of Difford's Boker's Style by Bob's Bitters with ice.
Fine strain the mixture into the chilled coupe glass.
Express the lemon zest twist over the cocktail to release its oils, then discard the twist.
Garnish the rim of the glass with a green apple wedge.
