Passion Fruit Mojito

Choose and pre-chill a highball glass.

Prepare garnishes by picking mint sprigs and scooping fresh passion fruit flesh and seeds.

Add mint leaves, Cuban rum, passion fruit liqueur, freshly squeezed lime juice, and passion fruit syrup to the chilled highball glass. Fill the glass two-thirds full with crushed ice.

Churn the mixture using a bar spoon, then top up the glass with more crushed ice.

Top with soda water and give it a brief stir.

Garnish with a bouquet of mint sprigs and a spoonful of fresh passion fruit flesh and seeds.

Serve with a straw.
