Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill a cocktail coupe.

Prepare a garnish by setting aside a fresh basil leaf.

Muddle the basil leaves in the base of a shaker.

Add Hayman's Old Tom Gin, freshly squeezed lemon juice, rich sugar syrup, Fee Brothers Celery bitters, and either the egg white or Fee Foam cocktail foamer.

Shake the mixture with ice and strain it back into the shaker.

Dry shake the mixture without ice to ensure proper emulsification.

Fine strain the cocktail into the chilled coupe glass.

Garnish with the reserved basil leaf.
