For lemon maple egg foam, combine 4 egg whites, 2 oz lemon juice, 4 oz maple syrup and 6 oz water in a suitable siphon, charge according to the equipment instructions and dispense. Stir the bourbon and Creole bitters with ice, strain into a rocks glass, top with the separate listed 3 oz prepared foam portion and finish with the orange peel.
