Combine the applejack (or calvados) and Red Dubonnet in a shaker.

Add ice to the shaker.

Shake the mixture until well chilled.

Strain the cocktail into an Old Fashioned glass.

Optionally, add a couple of dashes of Peychaud's Bitters or bitter orange, if desired.

Garnish with a twist of orange peel.
