Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill a highball glass.

Prepare a garnish of mint sprigs, arranging them into a bouquet.

Pour the light gold rum, pineapple juice, freshly squeezed lime juice, and rich sugar syrup into the chilled glass.

Fill the glass two-thirds full with crushed ice.

Churn the mixture gently with a bar spoon.

Top up the glass with more crushed ice and briefly churn again.

Float the Cockburn's Ruby Soho Port on top.

Garnish with the mint sprigs bouquet.
