Rossa Sour

Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill a Coupe glass.

Prepare a garnish by skewering a Luxardo Maraschino Cherry.

Add the Italian red bitter liqueur, rich sugar syrup, freshly squeezed pink grapefruit juice, freshly squeezed lime juice, and egg white or Fee Brothers Fee Foam cocktail foamer to a shaker.

Shake all ingredients with ice, then strain back into the shaker.

Dry shake the mixture without ice.

Fine strain the cocktail into the chilled Coupe glass.

Garnish with the skewered cherry.
