Gin Honey Phosphate

Start with these components prepared in advance: Honey syrup (honey myrtle-infused).

Combine the gin, honey myrtle-infused honey syrup, and acid phosphate in a mixing glass filled with ice.

Stir the mixture thoroughly until well chilled.

Strain the mixture into a highball glass already filled with soda water.

Gently stir to integrate the ingredients without losing the fizz.
