Mix the bourbon and chilled mint-infused simple syrup in a small pitcher.
Fill a Julep cup with shaved ice, pressing down to compact it firmly.
Arrange the mint garnish around the rim of the cup, creating a wreath-like effect.
Pour the bourbon and mint syrup over the ice.
Dust the drink with a touch of fine sugar.
