Combine the Scotch, lemon juice, walnut oil, rich demerara syrup, egg white, and Islay Scotch in a cocktail shaker.
Shake vigorously without ice to emulsify the oil and blend the ingredients.
Add ice to the shaker and shake again until well-chilled.
Strain the mixture into a Champagne Flute filled with fresh ice.
Top with a splash of soda water.
Serve immediately.
