Young Man's Delight

Prepare a garnish by twisting a lemon zest and slicing a quarter wheel of orange.

Shake the blanco tequila, freshly squeezed orange juice, freshly squeezed lemon juice, and egg white or Fee Foam with ice, then strain the mixture back into the shaker.

Dry shake the mixture without ice to achieve emulsification.

Slowly pour two-thirds of the shaker's contents from a higher-than-normal height into the chilled glass while simultaneously pouring Thomas Henry Ginger Ale with your other hand, allowing them to form a single stream into the glass.

Allow the cocktail to settle for at least a minute to achieve a perfect head, similar to pouring a Guinness. Ideally, place the glass in a freezer, glass-froster, or fridge during this time.

Pour the remaining contents of the shaker into the glass, allowing the head to rise like a soufflé.

Express the lemon zest twist over the cocktail and discard it.

Garnish the rim with the quarter orange slice.
