Celery Gimlet

Select and pre-chill a cocktail coupe.

Prepare a garnish of celery stalk, ideally with leaves.

Shake the celery gin, freshly extracted celery juice, herbal liqueur, freshly squeezed lime juice, sweetened lime juice, white wine vinegar, and celery bitters with ice.

Fine strain the mixture into the chilled coupe glass.

Garnish with the prepared celery stalk.
