Chill a Highball Glass in advance.

In a shaker, combine the Genepy, gin, freshly squeezed lime juice, pineapple juice, and falernum.

Shake the mixture without ice to blend the flavors.

Fill the shaker with ice and shake again until well-chilled.

Double strain the cocktail into the chilled coupe.

Garnish with a piece of pickled pineapple.
