Fluent French

Start with these components prepared in advance: Simple syrup (Lavender infused, see note).

Chill a martini glass by placing it in the freezer or filling it with ice water while you prepare the cocktail.

Combine the gin, dry vermouth, lavender-infused simple syrup, and a dash of celery bitters in a mixing glass.

Add ice to the mixing glass and stir the ingredients until well chilled.

Remove the ice from the martini glass if used for chilling, then strain the mixture into the glass.

Garnish with a twist of lemon, expressing the oils over the surface of the cocktail before placing it in the glass.
