Begin by adding the mezcal, pomegranate juice, lemon juice, simple syrup, chili pepper (Harissa paste), rose water, and egg white into a shaker.

Dry shake the mixture to emulsify the egg white.

Fill the shaker with ice and shake vigorously until well-chilled.

Strain the cocktail into a chilled Old Fashioned Glass.

Garnish with pomegranate seeds, pink peppercorn, and a pinch of Maldon salt.

Serve the strained cocktail over fresh ice in the old fashioned glass.
