Chill a cocktail coupe in advance to ensure it's well-prepared for serving.

Skewer a green olive and set it aside for garnish.

Combine Hayman's London Dry Gin, Lustau Amontillado Los Arcos Sherry, white balsamic vinegar, maple syrup, Angostura Aromatic Bitters, and 2 drops of saline solution or a pinch of salt in a mixing glass.

Add ice to the mixture and stir until well-chilled.

Strain the cocktail into the pre-chilled coupe glass.

Garnish with the skewered olive before serving.
