Suzette au Bal (Suzette at the Ball)

Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill an Old Fashioned glass.

Prepare a garnish of a dehydrated pear slice.

Shake the gentian liqueur, Giffard Poire William liqueur, Del Maguey Vida Clásico Mezcal, freshly squeezed lemon juice, rich sugar syrup, and egg white (or your chosen alternative) with ice. Then strain the mixture back into the shaker.

Dry shake the mixture without ice to achieve a smooth emulsification.

Fine strain the cocktail into the pre-chilled glass filled with ice.

Garnish with the dehydrated pear slice.
