The Dandy Brandy Smash

Quarter the lemon and add it to a cocktail shaker.

Introduce the mint leaves and simple syrup, then muddle them together with the lemon.

Add the Cognac and Applejack, followed by the egg white.

Perform a vigorous dry shake to emulsify the ingredients.

Add ice to the shaker and shake again until well chilled.

Strain the mixture into an Old Fashioned glass over a large ice cube.

Garnish with a fresh mint sprig.
