Saffron Fizz

Start with these components prepared in advance: Honey syrup (1:1, tangerine peel infused).

Combine the saffron gin, honey syrup infused with tangerine peel, lemon juice, and egg white in a cocktail shaker.

Whip shake the mixture with two ice cubes until the ice is nearly dissolved and the ingredients are well combined.

Open the shaker, add the cream and some cracked ice, then shake vigorously for about fifteen seconds.

Pop the shaker again, add soda water, and strain the cocktail into a highball glass without ice.

Garnish with freshly microplaned tangerine or orange zest, and add a few saffron threads for an extravagant touch if desired.
