Combine mezcal, tequila, Cynar, freshly squeezed lemon juice, simple syrup, and egg white in a shaker.
If desired, add a spoonful of carrot marmalade to the mixture.
Dry shake the ingredients to emulsify the egg white.
Add ice to the shaker and shake again until thoroughly chilled.
Double strain the cocktail into a chilled cocktail coupe.
Optionally, finish with a sprinkle of toast crumbs on top.
