Combine the gin, Calisaya, and Oloroso sherry in a mixing glass.

Add ice and stir the mixture until well chilled.

Strain the cocktail into an Old Fashioned glass over a large ice cube or sphere.

Garnish with a swath of grapefruit peel, expressing its oils over the glass before placing it as a finishing touch.
