Chamomile in my shoes

Start with these components prepared in advance: Blended Scotch (Famous Grouse (Infused with chamomile)).

Begin by adding the chamomile-infused Blended Scotch to a shaker.

Pour in the Amaro Meletti and absinthe.

Add freshly squeezed lemon juice and egg white to the mixture.

Introduce the honey syrup, mindful that it can be adjusted for personal sweetness preference.

Perform a dry shake, first shaking without ice to emulsify the egg white.

Add ice to the shaker and shake again to chill the mixture thoroughly.

Double strain the cocktail into a chilled Old Fashioned Glass.

Garnish with Peychaud's bitters and a touch of dried chamomile flowers.

Serve the strained cocktail over one large fresh ice cube in the old fashioned glass.
