Combine the Old Tom Gin, freshly squeezed lemon juice, honey syrup, and bitters in a shaker.

Shake vigorously with ice until well-chilled.

Fine strain the mixture into a cocktail coupe that has been rinsed with Yellow Chartreuse.

Serve immediately without garnish.
