Combine the rum, bourbon, Amontillado sherry, banana liqueur and yuzu juice. Heat the kefir to a simmer without boiling and add it warm to the cocktail mixture. Stand for at least 30 minutes, filter through a coffee filter and repeat through the same curds if needed for clarity. For ube syrup, dissolve equal parts sugar and water at a simmer, then add 1 drop ube extract, or a second drop for deeper colour and flavour. Stir the listed ube syrup portion into the filtered cocktail. Serve over one large ice cube in a rocks glass and stir to chill.
