Use 2:1 rich simple syrup for its listed portion.

Select and pre-chill a cocktail coupe to ensure your drink stays perfectly cold.

Shake the gin, absinthe, freshly squeezed lemon juice, sugar syrup, and egg white or cocktail foamer with ice vigorously.

Strain the mixture back into the shaker, discarding the ice.

Dry shake the mixture to create a rich, frothy texture.

Fine strain the cocktail into the pre-chilled coupe.

Pour the Green Chartreuse into a long-handled metal chef's measuring cup, ignite it carefully, and then pour the flaming Chartreuse over the cocktail for a dramatic finish.
