Chill an Old Fashioned glass in preparation for serving.

Prepare a garnish of amaranth sprigs or a basil leaf to complement the cocktail.

Stir the Del Maguey Vida Clásico Mezcal, Amaro Montenegro, Dubonnet or Byrrh rouge light quinquina, and a dash of Fee Brothers Celery bitters with ice until well combined.

Strain the mixture into the chilled glass over fresh ice, ideally a large cube or chunk of ice.
