Select and pre-chill a cocktail coupe.

Prepare a garnish using a short, pale yellow stalk and leaf from the celery heart.

Shake the celery juice, light white rum, Strucchi Bianco Vermouth, Lustau Jarana Fino Sherry, and elderflower liqueur with ice until well chilled.

Fine strain the mixture into the pre-chilled coupe glass.

Garnish with the prepared celery stalk.
